Gluten-free french crêpes recipe

Crêpes are traditional french pancakes, very thin and delicious.

You can fill your gluten-free crêpes with butter, jam, or just a bit of sugar. Or mapple syrup. Or anything really.

Some people roll their crêpes, other fold them. How do you like them ?

For 12 crêpes (very thin french pancakes) :

  1. In a large bowl, pour 125ml milk (I use lactose-free milk)
  2. Sift 200g of corn starch on top of the milk. Mix well.
  3. Add a tablespoon of vanilla sugar and a pinch of salt.
  4. Beat 4 eggs and add them to the mixture.
  5. Let it rest for about 20 minutes.
  6. Bake on both sides, in a greased skillet on medium heat, as they cook faster than the traditional recipe.

Gluten-free “Madeleines” from Les Recettes de Céliane

Madeleines were Proust’s favorites. I must say I love them too, and they are not the easiest to bake.

I found a french brand that sells good madeleines, quite close to the original version, and they are very practical to carry in your handbag or to give to children, as they have individual packaging. They are a bit expensive and quite rich, so I only buy them as occasional treats.

Gluten-free grocery shops : La Vie Claire gluten-free selection

La Vie Claire are supermarkets selling organic food.

They stock a good range of gluten-free products available, with even a few fresh gluten free products such as pizza and crusts, and some frozen gluten free food as well, such as tatin apple pie or Schär frozen gluten free pizza. I’ll be posting reviews on some of those products.
